I’ve been using iodé for over a year now on my Pixel 8, mostly without major problems. However, since updating to 7.4 (no settings changed), the connection to the cellular network became unreliable. When it is lost, the phone is not able to reconnect - e.g., after turning airplane mode on and off again, but also after installing/updating an app. The only way to reconnect to the cellular network is rebooting the phone. WiFi is not affected by the problem.
My mobile carrier is Vodafone Germany (physical SIM). I’m happy to provide any logs, just let me know what you need.

Can you please confirm with *#*#4636#*#* “> Phone Information > 3 dots > IMS Service” or “> Phone Information (v2) > IMS tab at bottom” that IMS registration and Voice over LTE are registered?
Sure, here is the output while I have cellular connection:
IMS registration: Registered
Voice over LTE: Available
Voice over Wi-Fi: Unavailable
Video calling: Available
UT Interface: Unavailable
Output after connection has dropped (just updated an App via Aurora Store):
IMS registration: Not registered
Voice over LTE: Unavailable
Voice over Wi-Fi: Unavailable
Video calling: Unavailable
UT interface: Unavailable
So this does confirm that your IMS registration is lost, but is it consistent when updating an app? That part seems odd. Are you on the move at the time and maybe your handoff between cell towers has an issue? This really seems like a carrier thing more than an OS thing, but I guess the best we can do is see if others report similar things (that aren’t related to basic default APN settings changes they don’t detect).
As more carriers across Europe are now disabling their 3G network towers, it could cause some of these issues?
For example, it was common in the USA in 2022 when they were shutting down 3G towers that when I traveled to one part of my city I would lose cellular connection requiring a reset (airplane mode on > 10 seconds > airplane mode off) to get going again like you describe. This was with Ubuntu Touch or LineageOS. My speculation was there was some sort of buggy de-commissioning of a tower in that part of town? But it wasn’t resolved until about a year later I didn’t notice it happening anymore? I don’t mention this to give any sort of “solution”, just to note it may be much broader of an issue than what OS you are using?
It is consistently happening when installing or updating an app. Doesn’t even matter if it is downloaded via Wi-Fi or via cellular connection. Each and every time, cellular connection is lost and can only be restored by rebooting the phone.
Also, as mentioned, after enabling and then disabling airplane mode, no cellular connection can be established.
In addition, I just noticed a third “cause” of this type of connection loss. Merely opening the M365 Copilot app leads to loss of cellular connection - also consistently, I tried it several times, doesn’t matter if the phone is connected to Wi-Fi or not. So far, I haven’t noticed another app where merely opening it causes this problem.
Seems unlikely to me that this is caused solely by the mobile carrier. The behavior started immediately after updating from 7.3 to 7.4. So far, I have seen two recent posts where users may have experienced similar problems:

I think I report a similar problem here.
Next Time I will try the suggestion from @rik to get more informations:
Thanks for mentioning my thread; I’m actually having the same issue, though it’s been less frequent over the past few days.
I’ll try checking my phone’s network status as @rik suggested.
For additional information, to compare with others affected by the issue:
I have two SIM cards. A physical one as my primary SIM and an eSIM just for calls.
And my provider only offers 4G and 5G networks (I’m on 4G).
