Before iodéOS, I had installed CalyxOS 6.8.21 with a relocked bootloader (avb_custom_key.img).

Yes, of course iodéOS 6.x is a first-class custom ROM, but this unofficial custom ROM has to be updated manually (which is no big deal), if there is an update at all.
A very good alternative is the OFFICIAL custom ROM LineageOS 22.2 for microG from Marvin Wißfeld Berlin microG Team. Of course, unlike iodéOS, you have to manually improve privacy and data protection, but in return you get a reliable OTA update directly to your device once a month.
That ROM comes from the LineageOS for microG project, which has no connection with Marvin Wißfeld Berlin microG Team, aprt from using their pre-built components.

I’ve got the code immediately as well, however the option within the developer USB section ‘OEM unlock’ is not available (it’s grayed out). I’ve read that I have to wait a couple of days until that option is available.

LineageOS was on my last device and I know how reliable it is! However, I discovered iodéOS thanks to an article on Kuketz IT and that article convinced me that I need to have it on my new device.
The unofficial status is unfortunate indeed, but I hope I get updates in the future

You could also try contacting the microG project at microg.org, and asking them if they made the ROM you linked to and which you claimed comes from them. It does not.
Does iodé provide any information about devices that will be supported in the future? The fact that there is an unofficial build for bangkk and that it is supported by LineageOS probably doesn’t mean anything? Or is there a beta program for the device? I would be interested in that.
I think it is a case by case decision. Typically the iodé team would want physical access to the device for testing before they would officially have a build made available. Sometimes this rule is stretched a bit, as the case of variants like as the Pixel 9 / Pixel 9 Pro / Pixel 9 Pro XL family.
But in the case of this device (bangkk) I have recommended it to them as a device to target. The next step would be for them to get one on hand (when time and money are right), then test to evaluate for inclusion as an official build.
I would also be interested in obtaining an official image of iode for the G84 5G. It would be the only Motorola device with 5G and perhaps a lockable bootloader ? Calxy supported this device with a lockable bootloader until the break, so it would be nice to have a privacy-friendly ROM for this device again.
