It seems that most of the tiles have been replaced with graphical “quick tiles” in IodeOS 7.3. Can I get the old-style tiles back?

It is just how Android is with the version, usually you can’t without big investment into developing it. There are lots of benefits in it. Bluetooth can now be turn off and on without 2 meaningless steps
I believe you mean the “status bar / notification pull down”, but yes as @mihi mentioned I don’t know of an (easy) way to revert it. There may be some in the custom launcher community that will come up with ways to change it back, but otherwise it is here to stay via updates from upstream AOSP: Android Developers Blog: Android 16 QPR2 is Released
