Heliboard works just fine for me, but if you are not satisfied with it, you could use alternatives. A very short forum search found me

There are many Heliboard settings such as configuring text correction (saving words, etc.), configuring dictionaries, layout options, appearance, etc: I would suggest digging into them (when the keyboard is active, tap the > in the keyboard header then the “gear”) and see if they can address some of your frustrations.
But yes as @MissPiggy notes there are several alternatives. I hear Futo is good but is not technically free (they strongly encourage you to pay for it if you use it - but I am personally happy to pay for good open software), or others such as “Fossify Keyboard (Beta)” from F-Droid.
Yes, there are a lot of settings.
What bothers me the most is that every time I want to enter text, the line with all the little icons appears.
It hides the suggestions area.
If I hide this series of icons with “>,” as soon as I press Return, it comes back.

Try reset the app: android settings, apps, all apps, find heliboard: delete both: cache and content …

I believe those settings are under “Toolbar” such as “Auto hide toolbar”, etc.
But to your question about resetting heliboard entirely, are you looking under your “Android System Settings > Apps > All Apps” as @volker01 notes? Let us know what level of that path you are stuck at.
After reset, for your future self there is an “Advanced > Backup and Restore” in Heliboard Settings for after you make settings changes you LIKE and want to save them or copy them to another device, etc.
I see that the app is still available in F-Doid. But on my phone I have the latest version.
I tried to erase and dowload again, but I can’t find the app on my phone when I go to Setting/applications/ all app …

The iodé version of Heliboard is a “light fork” with some adjustments, here is the source: os / apps / HeliBoard · GitLab. As a fork, then, you will see 2 entries in F-Droid for it (the upstream one and the “iodé version”, which was just updated today to version 3,7-iode.23). As the “iodé” version is installed at the “system level” it can’t be removed from F-Droid.
Instead it would be removed via “Preinstalled Apps”, which maybe you did? If so that would explain it not showing in “System Settings > Apps > All Apps”?
But if you didn’t remove it from “Preinstalled Apps”, then can you search for it in “All Apps” or maybe “3 dots > Show system” then search there (but there is an issue if it is only there).
