Can you recommend a contactless payment app that works well on a Pixel 7 Android 16 Iode 7.1-20251218-panther.

As far as I read about it in other fora, it is highly dependent on the app that your bank is supporting. Many banks and their banking apps rely on Google Pay.
The latest comment I read was that a iodé user was successfully using the (british) Curve app.
Keep in mind that even without Google, there is at least one more party processing your data than when you are using your physical credit/debit card directly at the terminal.
