Hi, I’ve got a Motorola G55 with Mediatek chipset. I guess I’d need to use the GSI version?

Will the G55 model be likely supported at some point in time even though it’s not Snapdragon chipset-based.

A LineageOS build (with sources, preferably officially supported by Lineage themselves) is needed before a device-specific iodé build can be made.
