A good candidate for replacement could be Quillpad from f-droid.
I tried a few (thanks for your suggestions!) and I believe I’ll stick with NotallyX: it basically just does the job, and in a lean way (I don’t need anything more).
I just wanted to point out that carnet is outdated and should be replaced as the default notes app. Obviously there are plenty of alternatives, from stripped-down to full-featured, and every user has different needs.
I don’t know what would be the best choice for iodé, from a basic app to a bloated one. I don’t even know which ones could be considered as popular. In the end the decision is the devs to make.
I would second this… but it’s not open source I believe… but then again, I use it exclusively for the reason @vince31fr mentioned with respect to Carnet above… the data in obsidian is completely transportable to other apps that support markdown.
And I gotta say, the sync and publish addons are pretty awesome as well.
As suggested by @vince31fr , Quillpad is a very good option but some Nextcloud sync bugginess kept me from being able to use it as daily note taking choice. I haven’t tried it in the past 9 months, however (but still they list Nextcloud support as “experimental”). I do see they are more active in development again after some slowdowns the prior years as they forked from other variants.
I moved to Joplin which can be connected to Nextcloud (but I self-host the server component of it instead), and it works well on desktop also (well even better on desktop ).
I would like to discuss whether it makes sense at all to preinstall a note-taking app. People have different requirements for many apps. Apps that are not immediately necessary for phone use (and a note-taking app definitely does not fall into this category; the other preinstalled apps (except perhaps Breezy Weather and CoMaps), imho, do not fall into this category) should therefore not be preinstalled.

After you have installed Iode, you have the option of selecting which apps you want or not.
Many new users are initially overwhelmed with the multitude of possibilities to find out something reasonable. I think it’s okay to offer a reasonable preselection.
Regarding a Notes app, I like NotallyX, but doesn’t have a Nextcloud connection or alternatively SilentNotes with Nextcloud connection and a desktop app for Windows
Carnet should be replaced, I think so too. As iodes aim is to be user-friendly I’ll vow for fossify notes. It’s super easy to use and gets updated frequently. Anyone more experienced can download their preferred note-taking app by themselves.
Why not ask fossify for a collaboration both could benefit from? They have the basic apps people admired as they were called simple mobile tools and iode already has their messages app installed. This could lead to a cleaner and smoother UI/UX and therefore make iode more acceptable to non tech-savvy users.
However, they are not completely uninstalled, but more completely than if I were to get rid of the bloatware via ADB. However, there are so many different opinions about Notes and maybe Weather from so many users (as you can clearly see in this discussion) that it’s almost impossible to reach a consensus (those who have a word processor (e.g., Collabora Office) installed on their device may not want one at all). Of course, you could hold another vote, as you have done in the past, but at least half (or more, depending on how many options were available for voting) will be dissatisfied with the preinstalled app. And weather and, above all, a note-taking app are secondary to the basic functions of a smartphone (whereas pre-installing CollaboraOffice or another open-source office suite instead of the unnecessary PDF viewer would be more essential).
After reboot it is actually uninstalled, but the reason there is a residual “stub” (not the actual app) hanging around is so the system can keep track of making sure it is uninstalled again with future system updates. Otherwise, as the update images have it bundled in again it would just come back each month.
