I feel like the default file browser isn’t remotely the best one, even amongst open-source apps. I currently use Material Files, and it is miles ahead of the default Files app, whether we’re talking about design or functionalities.
So, is there a technical reason explaining why it (or another alternative) isn’t the default app? Also, why can’t I uninstall the default Files app, like I can do for every other preinstalled app? Would it be possible to set Material Files as the system file manager? Because right now, when browsing files in-apps, IODÉ still uses Files.

As far as I know, for changing the default file browser, unless there is reason due to privacy, iodéOS uses the default lineage apps (LineageOS - Wikipedia) so requesting for them to change upstream is the best way to change this in iodéOS.
and keep in mind, users aren’t invited to delete the native file browser in settings> apps > preinstalled apps due to the risk of uninstalling it before installing an alternative.
if you are willing to risk breaking your system, you can try using adb shell to remove the system app (com.android.documentsui) but make a copy of all your data and note how to recover the system app before proceeding if it breaks your OS either immediately or upon updating. it worked for me, contact me via PM for the instructions
