After the update to 7.3, the icons in the status bar look absolutely terrible (some are larger and fatter than others (see the icons circled in red)). Before the update, the style of the icons could be changed. This option is now missing. Is this correct or can the icons still be customized?

this looks like a design issue. Did you install some kind of custom theme?
@MimLot that is the default / upstream design of this newer android base.
I personally always use a “circle icon” for my battery as it is more informative in my opinion. You can find this and other status bar icon settings by going to “System Settings > System > Status bar”
No, I don’t have a costume theme.
I found the circle version, but I don’t really like it. This is probably a matter of getting used to it.
I now only have the percentage for the charging status, I have hidden the icons for WiFi and mobile data.
It’s sad that many good setting options are disappearing and some things get worse.
